WMW - Korean Beef Recipe

There are days when you need something quick and easy for dinner after either a long day at work or a long day out on the trail. This is one of my easy go-to recipes, whether at home or out in our van.  One of the things that really gives this recipe the extra kick is the Mother-in-Law’s Korean Chili Flakes.  Check out the video from our recent trip out to Monadnock, NH, where I cooked this for dinner the first night we got to camp.

Korean Beef

Starting with shredded beef makes this a quick and easy dinner recipe you can make at home or out at the campsite.  Marinating the beef in soy sauce and brown sugar gives this a ton of flavor, just add some rice and veggies you have a complete meal.

Ingredients
  

  • ¼ cup Soy Sauce (I use low sodium)
  • ¼ cup Brown Sugar (Packed)
  • ½ tsp Ginger (I typically use dry ginger but you could use fresh. Use 2 tbsp if you are using fresh ground ginger.)
  • ½ tsp Ground Black Pepper
  • ½ tsp Chili Flakes (I use Mother in Law's Korean Chili Flakes)
  • 2 tsp Sesame Oil
  • 4 cloves Minced Garlic
  • 1 lb Shredded Beef
  • 1 bunch Chopped Green Onions

Instructions
 

  • Mix together the soy sauce, brown sugar, ginger, pepper, chili flakes, and half the sesame oil. Pour the marinade over the ground beef and place in refrigerator to marinate for at least 1 hour.
  • Heat the sesame oil in pan over medium heat and saute the garlic until fragrant.
  • Add the marinated beef to the pan and saute until cooked 5 - 10 mins. We personally like a little crispy sugar crust so we cook it closer to 10 mins.
  • Serve the beef over rice and sprinkle with the chopped green onions.

Notes

I like to serve this with broccoli either on the side or you could mix it in if you chop it small.
